The invention discloses a processing method of bamboo shoot food in the technical field of food processing. The processing method comprises the following steps of step 1, raw materials preparing: bamboo shoots, flour, water, edible edible salt and edible alkali; step 2, raw material treatment: screening and cleaning the bamboo shoots, chopping the bamboo shoots, and pulping to obtain bamboo shootpulp; step 3, ingredient stirring: adding 90-110 jin of flour, 4-7 jin of water, 0.1-0.2 jin of edible edible salt and 0.05-0.08 jin of edible alkali into every 20 jin of bamboo shoot pulp, putting amixture into a stirrer to be uniformly mixed, and obtaining bamboo shoot dough; step 4, pressing: carrying out pressing molding on the uniformly mixed bamboo shoot dough by adopting a molding machine;step 5, baking: taking out the formed bamboo shoot dough, putting the bamboo shoot dough on a baking tray, and putting the baking tray into an oven for baking; and 6, slicing and packaging: slicing the baked bamboo shoot dough, cooling the sliced bamboo shoot dough, and packaging the cooled bamboo shoot dough with packaging bags to obtain the ready-to-eat bamboo shoot food. The instant food whichis rich in nutrition and suitable for most people is mainly obtained.
