[0081] Preparation of green tea extract microemulsion. Green tea extract (available from Archer-Daniels-Midland Company, Decatur, IL) is a free-flowing powder standardized to 90% polyphenols and 50% EGCG (Epigallocatechin Gallate )). The product is very water soluble. 20%-30% GTE is dissolved in water along with 2%-10% ascorbic acid or citric acid to create the aqueous phase of the microemulsion. The oil-emulsifier phase was prepared using 30%-70% CAPMUL 471 (a C8 / C10 coconut mono / diglyceride) available from Abitec Corp. . The oil phase may contain mixed tocopherols (DECANOX MTS 90, available from Archer-Daniels-Midland Company, Decatur, IL) and soybean lecithin (BEAKIN LV1, available from Archer-Daniels-Midland Company, Decatur, IL). The different formulations (A-F) are shown in Table 1.

[0097] In this example, the antioxidant-containing microemulsions disclosed herein were compared to commercially available antioxidants to assess the oxidative stability of soybean oil, rapeseed oil, and NuSun oil. Oil storage evaluations were performed in an oven according to the Schaal oven test. The oils were stored in semi-closed amber Qorpak glass jars in a forced air oven at 565°C. At regular time intervals, oil samples were taken from the glass jars and the peroxide value (PV) was determined according to AOCS official method Cd 8-53. After removal, samples were blanketed with nitrogen and frozen until ready for analysis. Analyzes were performed for peroxide value, fatty acid, p-anisidine value and OSI.
