The invention relates to a phosphated Arillus Longan polysaccharide which is composed of glucose, arabinose, galacturonic acid, levulose and sorbose. The molecular weight of the phosphated Arillus Longan polysaccharide is 112518.5. The synthesis method of the phosphated Arillus Longan polysaccharide comprises the following steps: (1) separating and extracting Arillus Longan polysaccharide; (2) removing proteins and pigments; (3) carrying out graded purification on the Arillus Longan polysaccharide by a diethylaminoethyl cellulose column; (4) purifying the Arillus Longan polysaccharide by a Sephacryl S-300 HR column; and (5) esterifying the Arillus Longan polysaccharide with a phosphating reagent POCl3. According to the invention, an artificial synthesis method can be used for preparing the phosphated Arillus Longan polysaccharide which contains glucose, arabinose, galacturonic acid, levulose and sorbose.
