Problems solved by technology

The current brown sugar preparation process requires professional facilities and equipment, the process is complicated and cumbersome, and the production cost of the formed product is high, and the refined brown sugar will lose a lot of nutrients
[0003] At present, there is a kind of brown sugar tablet that is hand-cooked in the folk. The pressing process in the preparation process is just a simple and direct pressing, resulting in a lot of waste of sugar. At the same time, the cooking process takes about 22 to 24 hours. The production cycle Long, and in such a long heating process, it is easy to caramelize the syrup and then affect the taste and quality of the sugar

Embodiment 1

[0016] The process for preparing brown sugar from sugarcane provided in this embodiment includes the following steps:

[0017] 1) Juicing, the harvested sugarcane is washed, chopped, squeezed and filtered to obtain squeezed residue and sugarcane juice, and then pressed in three batches;

[0018] 2) Ethanol extraction, soak a batch of press residue in an ethanol solution for 5 hours, then press and filter to obtain a sugar-containing ethanol solution; then use the sugar-containing ethanol solution to treat the second batch of press residues. Three batches of press residues in ethanol treatment;

[0019] 3) Heat and remove impurities, put the sugarcane juice in a heating pot and heat it to boiling for 5 minutes, and filter after cooling to obtain the filtrate;

[0020] 4) Mix and boil, add the sugar-containing ethanol solution obtained in step 2) and the filtrate of step 3) in a ratio of 1:1 into the heating pot and heat it to boiling, and then boil it on a low fire. When the syrup drip...

Abstract

The invention provides a process for preparation of brown sugar from sugarcane. The process includes: juicing, ethanol extraction, heating and impurity removal, and mixed boiling four steps. According to the invention, by means of extracting the residual sugar in the squeezed residue through ethanol, sugar in sugarcane can be transformed maximumly, also the sugarcane juice is firstly boiled, black foams in the juice is removed by filtering, and the filtrate is mixed with a sugar-containing ethanol solution, thus not only lowering the boiling point of the solution, reducing sugar coking, but also accelerating the evaporation of water and ethanol in the solution, and speeding up sugar making. Experiments show that the sugar making time of the process is in the range of 4-4.5. The brown sugar prepared by the process provided by the invention completely adopts physical method, is not added with any chemical, and the sugar product is very healthy.

Description

Technical field [0001] The invention belongs to a food production process, and particularly relates to a process for preparing brown sugar from sugar cane. Background technique [0002] Brown sugar usually refers to the finished sugar prepared from sugarcane. The process flow is: sugarcane is squeezed → concentrated → refined to obtain brown sugar, brown sugar powder and other finished brown sugar products. The current brown sugar preparation process requires professional facilities and equipment, and the process flow is complex and cumbersome. The resulting product has a high production cost, and the refined brown sugar will lose a lot of nutrients. [0003] At present, a kind of brown sugar tablet is made by hand in the folk. The pressing process in the preparation process is just simple and direct pressing, resulting in a lot of waste of sugar. At the same time, the cooking process takes about 22-24 hours. The production cycle Long, and in such a long heating process, it is eas...
