The invention relates to a method for preparing haematochrome of red rice, which belongs to the technical field of the production of natural pigments. The method comprises the following steps of: (1) preparing an extracting agent, namely adding 0.3 percent citric acid into 15 to 45 percent food grade ethanol to adjust the pH of the ethanol to between 2.5 and 3.8, and using the mixture as the extracting agent; (2) performing extraction, namely mixing black scented rice with the extracting agent in a weight ratio of 1:1-5, performing the extraction for 1 to 3 hours at the temperature of 40 DEG C, repeating the operations for 2 to 3 times, and then combining extraction liquid; (3) performing ethanol treatment, namely concentrating the extraction liquid by using a falling film evaporator until the volume of the extraction liquid is 1/5 to 1/8 of the original volume, adding 95 percent ethanol, adjusting the ethanol content to between 65 and 80 percent, standing the mixture for 3 to 5 hoursat the temperature of between 0 and 5 DEG C, depositing the mixture in alcohol to remove impurities, then filtering the mixture by using a centrifugal machine, and collecting filtrate; and (4) performing concentration, namely concentrating the filtrate by using the falling film evaporator. The product keeps the inherent components to the utmost extent, and has high unit color scale, good stability and good water solubility.
