According to the established method, the high-quality pig skin gelatin is produced by combining liquid nitrogen rapid freezing with acid unfreezing, the technology has the advantage that a novel gelatin extracting method is developed, a pig skin raw material is unfrozen with acid after liquid nitrogen rapid freezing is adopted, that is to say, after liquid nitrogen rapid freezing is conducted, the pig skin raw material is treated only for 10 min with HCl and then washed to be clean with deionized water, and gelatin extracting can be conducted with hot water. Compared with a traditional acidic method technology, the acid treatment time is greatly shortened.
