[0060] Preparation example 1: Preparation of mung bean protein decomposition product-1

[0061] The by-product of the vermicelli manufacturing process, that is, the dried product of the discharged liquid containing mung bean protein is pulverized with a pulverizer, and tap water is added for dispersion so that the crude protein content is 6% by mass. The pH was adjusted to 3 with hydrochloric acid, and 3000 units of acid protease (manufactured by Napsin, Nagakushintec) was added per 1 g of crude protein, and the reaction was carried out at 40°C for 16 hours under stirring. After the reaction is over, heat at 80-85°C for 20 minutes to inactivate the enzyme. The enzyme reaction solution was centrifuged, sodium hydroxide was added to adjust the supernatant to pH 8, and then activated carbon treatment, filtration, and filtration sterilization were performed, and then freeze-dried to obtain a mung bean protein decomposition product. According to the above procedure, the molecular wei...

[0062] Preparation example 2: Preparation of mung bean protein decomposition product-2

[0063] According to the same method as Preparation Example 1, a dispersion liquid with a crude protein content of 6% by mass was prepared. After adjusting the pH to 7 with sodium hydroxide, add 10,000 units of alkaline protease per 1g of crude protein (ビオプラ-ゼSP15-FG (trade name), manufactured by ナガセケムテツクス company), stirring slowly at the same time React at ℃ for 16 hours. After the reaction, heat at 80-85°C for 20 minutes to inactivate the enzyme. The enzyme reaction solution was centrifuged, and the supernatant was freeze-dried to obtain a mung bean protein decomposition product. According to the above procedure, the molecular weight distribution of this decomposition product was measured. The ratio of dipeptides to tripeptides in the total peptides of this degradation product was 61.1%.

[0064] Preparation Example 3: Preparation of feed containing mung bean protein decomposition product

[0065] As the rat test feed used in Example 1 below, the mung bean protein decomposed product obtained in the above Preparation Example 1 was mixed as crude protein into the powder feed of CRF-1 (Oriental Yeast Co., Ltd.) and each contained 0.25% W / w, 1.25% w / w and 2.50% w / w crude protein were prepared into granules with a tablet machine.

Abstract

A food for preventing life style-related diseases which contains a mung bean protein digestion product. This mung bean protein digestion product can be obtained by hydrolyzing mung bean-origin protein with a protease. It is preferable that the content of dipeptides or tripeptides in the total peptides in the mung bean protein digestion product amounts to 10% or above. The food for preventing life style-related diseases as described above is suitable for preventing, in particular, hypertension, arteriosclerosis, obesity and so on. It is also intended to provide an anti-hypertensive drug, an anti-atherogenic drug, a blood vessel thickening inhibitor and an anti-obesity drug containing the mung bean protein digestion product as described above. It is furthermore intended to provide a diet food containing the mung bean protein digestion product. Because of being obtained from a material originating in a natural substance that has been taken for a long time, the mung bean protein digestion product has little side effects and a high safety. Moreover, it can be produced from a by-product obtained in the process of producing bean-starch vemicelli (Harusame). Thus, it is nondetrimental to the environment and expected as contributing to the recycle-based society.

Description

Technical field [0001] The present invention relates to foods for the prevention of lifestyle-related diseases. More specifically, it relates to antihypertensive drugs, antiarteriosclerotic drugs, vascular hypertrophy inhibitors, and antiobesity drugs containing mung bean protein decomposition products, as well as antihypertensive drugs, Foods or medicines and quasi-drugs of anti-arteriosclerotic drugs, vascular hypertrophy inhibitors or anti-obesity drugs. The present invention also relates to foods with slimming effects containing mung bean protein decomposition products. Background technique [0002] In recent years, lifestyle-related diseases have increased and have become a social problem. It is required to try to prevent and improve lifestyle-related diseases in daily life, and for this reason, it is desirable to ingest safe functional substances. Since food contains various physiologically active substances, there is increasing interest in food-derived functional substance...
