green tea production process which comprises the following specific steps: firstly, preparing a new
composite material which consists of a
probiotic synergist, an
astringent neutralizer and a
flavor synergist according to the addition amount of 3-5kg of the
probiotic synergist, 1-2kg of the
astringent neutralizer and 0.5-1kg of the
flavor synergist per 100kg of rolled leaves, then preparing the new
composite material into paste, adding the paste into a
fermentation tank, and performing
fermentation at the temperature of 20-30 DEG C to obtain the dark
green tea. The preparation method comprises the following steps: rolling tea leaves, uniformly spraying on the surfaces of the rolled tea leaves, uniformly stirring, carrying out
pile fermentation, supplementing a dry composite new material into the tea leaves after the
pile fermentation is finished and the tea leaves are dried, uniformly mixing, carrying out hundred-year post-fermentation, and finally
drying and packaging the tea leaves to obtain a dark
green tea finished product. According to the dark green tea production technology, through the synergistic
chemical reaction of the new composite materials and natural substances of the tea leaves, the
astringent taste generated in the fermentation process of the dark green tea is reduced, the mellow taste and smoothness of the taste are improved, meanwhile, proliferation of probiotics is promoted, functional ingredients are enriched, the health-care value of the product is improved, and the quality of the dark green tea is improved.
