Eicosapentaenoic acid (EPA) compositions and EPA-rich polar lipids for prophylactic or therapeutic applications are described. Production from certain cultured micro-organisms (like Nitzschia laevis) promotes synthesis of EPA, including polar lipids including EPA. The EPA-rich polar lipids themselves may be used as polar compounds. EPA can be selectively hydrolysed from particular positions in isolated polar lipids by lipase activity, then optionally further purified. The process bypasses reliance on diminishing fish stocks and on physico-chemical processes that may not adequately separate desirable n-3 HUFAs from unwanted products like DHA also found in fish oil and cultured organisms.

The present invention provides a method for producing a fatty acid ester inexpensively and efficiently by reacting a lipase or an intact mircroorganism containing a lipase, an oil and fat, and a linear lower alcohol in a system containing little or no solvent in the presence of water. The intact microorganism has not been treated with a solvent or the like, and is used as such, so that a fatty acid ester can be prepared in a simple manner. An oil and fat, a natural oil and fat such as a vegetable oil and fat, an animal oil and fat, as well as a waste oil thereof can be used. According to the method of the present invention, a reaction proceeds even in the presence of water, so that waste oils containing a large amount of water can be used as a raw material. The present invention discloses a method for extracting rice protein from rice. Said method includes the following steps: cleaning rice, soaking, removing sand, grinding to make pulp, concentrating and drying rice protein; also includes the steps of fine-grinding rice pulp, adopting dished separating machine to make multistage separation and making the protein pulp undergo the process of enzyme treatment. The invention relates to a method for enriching n-3 polyunsaturated fatty acid (n-3PUFA) from fish oil, which belongs to the food organism and functional health product technical field. The method takes the fish oil as a raw material, uses the chemical hydrolysis method to hydrolyze the fish oil, respectively obtains high-purity eicosapentaenoic acid (EPA) and high-purity docosahexaenoic acid (DHA) from the hydrolyzed fish oil through separation and purification, uses glycerol and the purified EPA or DHA as raw materials and utilizes lipase to respectively catalyze and synthesize an EPA glyceride product or a DHA glyceride product in an organic phase. The products are mainly n-3PUFA triglyceride; the purity of the products is high; and the concentration of EPA triglyceride in the EPA glyceride is between 90 and 95 percent, and the concentration of DHA triglyceride in the DHA glyceride is between 92 and 94 percent. The high-purity EPA triglyceride product and the high-purity DHA triglyceride product prepared by the method well improve the application pertinence of different health care efficacies of natural fish oil products and improve the functional health care value of the fish oil products.

The invention discloses a preparation method of 1,3-dioleoyl-2-palmitoyl triglyceride, which comprises the following steps: carrying out esterification reaction on glycerol and palmitinic acid under the action of a catalyst to obtain tripalmitin; carrying out ester exchange reaction on the tripalmitin and oleic acid or oleate under the action of 1,3-specific lipase until the ester exchange rate reaches 30-60%, and removing free fatty acids or fatty acid esters in the reaction system; and adding oleic acid or oleate into the reaction system, continuing the reaction until the ester exchange rate reaches 60-90%, and separating and purifying the 1,3-dioleoyl-2-palmitoyl triglyceride from the reaction products. Methods of treating dehulled or hull-less oat, i.e. oat groats, to produce oat pearlings, oat flour and oat bran products are described. Oat groats are abrasion milled to remove up to 15% by weight and produce pearled oat groats and pearlings. The pearlings are extracted sequentially with aqueous ethanol and hexane to produce an anti-irritant and a light oat oil, or with hexane to produce a dark oat oil and lipase.
