Embodiment 1

[0017] The preparation operation steps of the edible animal oil rich in phytosterol ester are as follows:

[0018] Step 1. Weigh 1000mL lard, add it to the reaction kettle, and heat up to 60°C, mix well;

[0019] Step 2. Vacuumize to ensure that the reactor is in a negative oxygen state;

[0020] Step 3. When the reactor is stirred, add 20g of phytosterol ester and 1g of vitamin E;

[0021] Step 4. Under the condition of stirring, keep warm at 60°C for 20 minutes, and the obtained animal oil mixture is filtered to obtain lard rich in phytosterol esters. The prepared edible animal oil rich in phytosterol esters is a slightly yellow translucent liquid. It is white and solid, and all indicators such as odor, moisture, acid value, and peroxide value are qualified.

[0022] The used phytosterol ester is prepared by esterification of phytosterol and vegetable oil fatty acid. Wherein the phytosterol is one or a mixture of β-sitosterol, campesterol and stigmasterol. Phytosterol es...

Embodiment 2

[0024] The preparation operation steps of the edible animal oil rich in phytosterol ester are as follows:

[0025] Step 1. Weigh 1000mL cream, add it to the reaction kettle, and heat up to 80°C, mix well;

[0026] Step 2. Vacuumize to ensure that the reactor is in a negative oxygen state;

[0027] Step 3. When the reactor is stirred, add 50g of phytosterol ester, and add 0.5g of vitamin E and 0.5g of fat-soluble tea polyphenols;

[0028] Step 4. Under the condition of stirring, heat preservation at 80° C. for 20 minutes, and filter the obtained animal oil mixture to obtain cream rich in phytosterol esters.

Embodiment 3

[0030] The preparation operation steps of the edible animal oil rich in phytosterol ester are as follows:

[0031] Step 1. Weigh 1000mL butter, add it to the reaction kettle, and heat up to 120°C, mix well;

[0032] Step 2. Vacuumize to ensure that the reactor is in a negative oxygen state;

[0033] Step 3. Add 80g of phytosterol esters, 0.5g of vitamin E, 0.5g of lycopene and 0.5g of fat-soluble tea polyphenols under the stirring condition of the reactor;

[0034] Step 4. Under the condition of stirring, heat preservation at 120° C. for 20 minutes, and filter the obtained animal oil mixture to obtain tallow rich in phytosterol esters.

Abstract

The invention relates to a preparation method of edible animal oil rich in plant sterol ester. According to the preparation method, the edible animal oil is used as a main raw material, and 0.001-0.1 g of plant sterol ester and 0.0005-0.002 g of antioxidant are added into every millimeter by volume of edible animal oil. The preparation method comprises the following specific operation steps of: weighing the edible animal; adding into a reaction kettle; heating to 60-120 DEG C; uniformly mixing; vacuuming; adding the plant sterol ester under the condition of stirring; adding the antioxidant; and preserving heat for 20 minutes to obtain the edible animal oil rich in the plant sterol ester. The used raw materials have wide sources and are low in cost; the synthesized plant sterol ester is a fat soluble antioxidant; and one or more antioxidants of vitamin E, lycopene and fat soluble tea polyphenol are added, so that the oxidation stability of the animal oil can be increased and the storage is facilitated.

Description

technical field [0001] The invention belongs to the technical field of oil deep processing, and in particular relates to a preparation method of edible animal oil rich in phytosterol esters. Background technique [0002] Edible oil can be divided into two categories, namely animal oil and vegetable oil. Moreover, edible animal oil is solid at room temperature, has high stability, can be stored for a long time, is not easy to deteriorate, and is more resistant to high-temperature cooking. It is more suitable for cooking than liquid vegetable oil (such as sunflower oil and salad oil), and it is less prone to oxidation to generate free radicals. They also contain some high-quality ingredients that are good for the body. For example, edible animal oil contains lauric acid, which can be antibacterial, antiviral and enhance immunity, which is an advantage that other liquid vegetable oils without lauric acid do not have. Appropriate consumption of edible animal oil can strengthen...
