The invention discloses a method for using fermented soya bean grease as a natural anti-oxidant, comprising the following steps: flattening fermented soya bean and putting the flattened fermented soya bean in a grease extractor; adding an extractant in the grease extractor and conducting pumping filtration to obtain an oil-soluble mixed solution containing the fermented soya bean; carrying out underpressure distillation on the mixed solution to obtain fermented soya bean oil; and adding the fermented soya bean oil in edible oil or plant essential oil to be used as the natual anti-oxidant. According to the invention, by utilizing the method disclosed herein, a method of extracting grease from traditional fermented black curded beans and then using various edible oil or citrus essential oil as a natural anti-oxidant is realized, and the characteristics of simple preparation method, strong antioxidation activity, low cost, natural and health are achieved.
