Abstract

The invention belongs to the field of food processing, and relates to a method for extracting and preparing soluble dietary fiber-pectin from corn cob. The method comprises the steps of alkaline hydrolysis, cold digestion, enzymolysis secondary treatment, alcohol extraction and freeze-drying. The method is implemented in a way that: respectively researching technological conditions for an alkaline hydrolysis process and an alkali+enzymolysis two-step process on the basis of 4*5 single factor experimental design; respectively carrying out key factor 3*3 optimization on the alkaline hydrolysis process and alkali+enzymolysis two-step process by using a response surface mathematical model; and establishing the technical route of the two-step process. The yield and purity of the corn cob pectin prepared by the method can respectively reach 15% and 36%.
