Abstract

The invention discloses a preparation method of seabuckthorn seed oil microcapsules rich in dietary fiber. Seabuckthorn seed oil rich in linoleic acid and linolenic acid is selected as a core materialof the microcapsules, and modified starch, sodium caseinate and maltodextrin are used as an ordinary wall material, resistant starch, sugar cane extract and isomaltulose which have a blood sugar stabilizing function are added as a functional wall material, through batching, shear emulsification and homogenization, a seabuckthorn seed oil emulsion is prepared, and the effect of the functional wallmaterial on the properties of the emulsion is studied; and through spray, drying and other processes, a seabuckthorn seed oil microcapsule product with high oil-fat embedding rate and rich dietary fiber is obtained. Through in-vitro digestion characteristics study, a digestibility curve of the seabuckthorn seed oil microcapsules rich in dietary fiber is lower than that of white bread reference, and eGI is 60.17.
