The dielectric constant sensing system comprises a dielectric constant sensing device, a conditioning part and a dataprocessing part. A measured substance is placed into the dielectric constant sensing device for converting the dielectric constant of the measured substance into a capacitance value; the capacitance value is amplified and denoised by the conditioning part, and the capacitance value is converted into a frequency value. The data processing part executes measurement calibration on the frequency value: establishing a corresponding relationship between the frequency and the dielectric constant by a piecewise linearization data processing method, and realizing measurement of the dielectric constantof the measured substance through conversion from the frequency to the dielectric constant to obtain the dielectric constant of the measured substance after measurement calibration. According to the invention, rapid and accurate measurement of dielectric constants of pure or impurity-containing solids, liquids and powder particles can be realized.
