The invention relates to an extraction method of the red date peel pigment, which comprises the following steps: drying and crushing red date residues; using cellulase for assisting in enzymolysis ofthe red date peel, using pectinase for assisting in enzymolysis of the red date peel, and finally using protease for assisting in enzymolysis of the red date peel; performing enzyme deactivation afterenzymolysis and ultrasonic treatment are completed; extracting by using NaOH, and taking a supernatant; adjusting the pH value of the supernatant, filtering by adopting a vacuum filtration method, and concentrating the obtained filtrate under reduced pressure; and transferring the concentrated solution to a vacuum freeze dryer for vacuum freeze drying to obtain the red date peel pigment.
