Abstract

The present invention provides a kombucha protein beverage and a preparation method thereof. The method includes: adding Saccharomyces cerevisiae (S288C), Lactobacillus acidophilus (NCFM) and Lactobacillus casei (LC2W) with a viable count proportion of 1: 1: 1 into kombucha protein fermentation base materials, fermenting the mixture to a pH of 3.6-4.5, and sterilizing the fermented mixture to obtain the kombucha protein beverage; the base materials includes 1-20% of sugar, 0.2-2% of black tea powder, 2-20% of protein base materials and water up to a final volume of 100% (w / w); and the amounts of the above-mentioned bacterial strains are 107-109 cfu / mL, respectively.
