Abstract

The invention discloses a mulberry red pigment extraction and purification method. The method comprises the following four steps: extracting mulberry red pigment, determining the using amount of macroporous resin D101 in the purification technology, determining the yield, and using HPLC to measure the components. In the experiment to measure the mulberry red pigment, the maximum absorption wavelength is 520 nm. Through the research on using amount of extraction solvent, ultrasonic time, ultrasonic extraction frequency, and using amount of resin, the optimal technology is obtained: the extraction solvent is a mixture composed of ethanol (80%) and HCl according to a ratio of 1:1, the liquid / material ratio is 1:15, the ultrasonic time is 30 minutes, the extraction and ultrasonic treatment are carried out for two times, and the using amount of macroporous resin D101 is 2.7 g / g; and the yield of mulberry red pigment is 5.6 mg / g(mulberry). Through the HPLC, people acknowledges that the main component of mulberry red pigment is anthocyanin; the mulberry anthocyanin has a similar structure as that of huckleberry anthocyanin; and the mulberry anthocyanin can be used as a good raw material of healthcare products.
