The invention discloses a high-efficiency astragalus polysaccharide extraction method. The method comprises soaking radix astragali in water for 1 to 2 hours, grinding the radix astragali to obtain radix astragali powder, carrying out enzymolysis on the radix astragali powder through cellulase for 0.5-1h, carrying out backflow at a temperature of 60-85 DEG C for 3-5h, adding ethanol having a volume concentration of 75% into the enzymolysis product, carrying out extraction, separating the extract, cooling the extract to the room temperature or less, adding an aqueous solution of sodium acetate into the extract, heating the mixture to 50-100 DEG C, carrying out thermal insulation for 20min to 1h, filtering the extract to obtain a filtrate, adding ethanol having a volume concentration of 95% into the filtrate, carrying out reflux extraction to remove esters, heating the extract to 80-100 DEG C, keeping the temperature for 15-20min so that precipitates are produced, and drying the precipitates at 85-90 DEG C to obtain astragalus polysaccharide. Cell surface structures of the radix astragali powder are decomposed by cellulase and a part of a sugar substance is dissolved out.
