Abstract

Disclosed herein are methods of preparing plant matter extracts and food compositions comprising the extracts. The plant body is selected from avocado, alfalfa, fig, primrose and mixtures thereof. The method comprises providing plant matter selected from the group consisting of avocado, alfalfa, fig, primrose, and mixtures thereof; combining said plant matter with an aqueous solution and optionally with enzymes, and optionally with heat, to provide a a digested vegetable mixture; concentrating the digested vegetable mixture to increase the concentration of carbohydrates therein. The method of preparing a food composition also includes combining the digested vegetable mixture with one or more food composition components.
