The dietary fiber is prepared by the following steps of: crushing cooked puer tea to form 80-mesh particles; mixing 1g of tea and 100ml of de-ionized water, wherein the water temperature is 50 to 80 DEG C; preserving the heat for 12 hours; centrifugally filtering the mixture with a 300-mesh filtering cloth; adding 500 to 2,000u of composite enzyme of cellulase, hemicellulase and pectinase into the mixture of the 1g of tea dreg and 50ml of de-ionized water, wherein the water temperature is 45 DEG C and the pH value is 5.5; preserving the heat for 8 to 12 hours; performing centrifugal filtration and combining the filtrate of the two steps; mixing the filtrate and edible alcohol in the proportion of 1 to 5 and stirring for 15 minutes; standing for 5 hours and centrifugally collecting precipitate; adding 1g of precipitate into 50ml of de-ionized water, dissolving the precipitate, dialyzing the room temperature flowing water in a dialysis bag with molecular interception of 1,500 for 24 hours and collecting dark brown solution which does not pass through the dialysis bag; and concentrating under reduced pressure and performing spray drying to obtain the puer tea dietary fiber.
