Abstract

In the method, a pure natural and fully water-soluble dietary fiber product is obtained through pretreatment of the bean dregs, steam explosion, ultrafine grinding, enzymolysis and drying of enzymolysis slurry. In the method, conversion rate of the soluble dietary fiber can be quickly and effectively increased by performing the steam explosion before the enzymolysis. Other chemical substances are not required to be added due to the adoption of the steam explosion, and the product is the pure natural dietary fiber. Cellulase, pectinase or xylanase can be separately used as an enzyme used in the method.
