The chrysanthemum absolute oil is extracted by adopting the following steps of: placing chrysanthemum raw materials in an extracting tank, vacuumizing the extraction tank until the vacuum degree in the extracting tank is more than 0.07MPa, stopping vacuumizing, adding a main solvent of subcritical dimethyl ether fluid in the extracting tank for reflux extraction, wherein the adding quantity of the main solvent is 2-10 times the weight of the chrysanthemum raw materials, the extracting conditions comprise the temperature of -10-30 DEG C, the pressure of 0.1-0.9MPa and the time of 1-5h; after the extraction is ended, introducing an extraction solution to a separating tank to ensure that the dimethyl ether solvent is decompressed and gasified to be separated from a chrysanthemum crude extract; making the separated solvent enter a storage and collection tank after being compressed and cooled; when the pressures of the extraction tank and the separating tank drop to zero, remaining for 5-10min, opening the separating tank for receiving the chrysanthemum crude extract; and removing water from the chrysanthemum crude extract by using an oil-water separator to obtain a chrysanthemum extract, adding 95 percent alcohol which accounts for 5-20 times the weight of the chrysanthemum extract, stirring and uniformly dissolving, freezing for 5-15h at the temperature of -5 to -20 DEG C, leaching and concentrating to obtain the chrysanthemum absolute oil.
