The method comprises the steps of detecting a meat product by utilizing a fast electrical meat impedance-spectroscopy detection instrument to obtain electrical bioimpedance-spectroscopy data, obtaining the parameters R0, R[infinite], a and f[C] of a Cole impedance model by adopting an iterative least squares fitting method, acquiring an output value of a classification forecasting model by taking the parameters R0, R[infinite], alpha and f[C] of a Cole impedance model as input features of an artificial neural network classification forecasting model, and judging whether the detected meat product is water-injected meat according to the output value. According to the detection method, by adopting a two-electrode method, an alternating-current signal with constant amplitude value is inserted in the detected meat product through a pair of needle-like electrodes, and the change of voltages at two ends can be detected through the same pair of electrodes, so that the detection data can be obtained, the fast detection on the meat product can be realized without the damage to the detected sample, and the detection precision is high.
