Abstract

The invention discloses a broccoli leaf protein and a preparation method thereof. The broccoli leaf protein is prepared according to the following steps of: preparing juice by using at least one organ of stems, leaves and ball-flowers of the broccoli as a raw material; and carrying out acid treatment and heat treatment, or, carrying out acid treatment and flocculant treatment to on the juice to obtain a sediment which is broccoli leaf protein. The broccoli leaf protein is dark-green powder, and has special taste of the broccoli, crude protein content of not less than 40 percent and the total amino acid content of not less than 25 percent. The broccoli leaf protein can be used in the feed for replenishing the protein required by animals.
