The invention also provides the method of applying the Aspergillus niger with the accession number of CCTCC No. M2011428 in fermenting bamboo shoots or bamboo shoot residues so as to improve the content of phytosterol. The method enables the dry weight of phytosterol to increase from 412.5 to 523.4 mg / 100g before fermentation to 701.2 to 1184.5 mg / 100g and allows fermentation time to be shortened simultaneously.
