Abstract

The invention relates to a method for extracting soybean dietary fibers from residues of a water enzyme method, and belongs to the technology of food processing. The method comprises the following steps of: (1) crushing soybeans, performing pretreatment of extrusion and puffing to obtain puffing materials, mixing the puffing materials with water to obtain a mixed solution, adding alkaline protease into the mixed solution to perform enzymolysis, and performing centrifugal separation to obtain free oil, emulsion fluid, hydrolysate and the residues; and (2) drying and crushing the residues obtained in the step (1), extracting by a microwave auxiliary enzyme method, and filtering to obtain filter residues and filtrate; dispersing the filter residues in water, homogenizing under ultra-high pressure, stewing at high temperature, and performing centrifugal separation to obtain supernate and precipitates; mixing the supernate and the filtrate, performing ultrafiltration treatment, and spray-drying to obtain water-soluble soybean dietary fibers; and washing the precipitates, drying, and crushing to obtain water-insoluble soybean dietary fibers. The method is simple in process and equipment, convenient to operate and control, low in production cost, short in extraction time and high in extraction efficiency, and the content of the water-soluble dietary fibers is high.
