The method comprises: selecting onion, squeezing juice, mixing with phytic acid, disodium ethylene diamine tetraacetate, ascorbic acid, L-cysteine and the like, adjusting pH value with citric acid to obtain the composite fresh-keeping agent; immersing the pre-processed lotus root slices in the composite fresh-keeping agent for fresh-keeping processing; and finally employing vacuum package, and placing at appropriate conditions for refrigeration.
