Abstract

The invention discloses a method for rapidly identifying single-flower honeys by using a capillary electrophoresis technology. The method is used for analyzing proteins in honeys by using the capillary electrophoresis technology and identifying authenticity of honeys by using difference of content and types of proteins in different honeys. The method is simple and convenient, is high in efficiencyand accurate in identification results, and has an extensive application prospect in true and false identification of the honeys. The method comprises the following steps: (1) adding sample bufferingliquid into a honey sample for pretreating, reacting for one hour at normal temperature, then centrifuging for 5 minutes at 10000rpm to obtain supernatant liquid which is a sample; (2) carrying out capillary zone electrophoresis on the sample and establishing capillary electrophoresis fingerprint spectrums of single-flower honeys; and (3) carrying out chemometrics analysis of the fingerprint spectrums and achieving identification of the single-flower honeys. The minimum detection limit of the method on a jujube flower honey, a chaste honey and a wolfberry honey is 5%; the minimum detection limit of the method on a robinia honey is 10%.
