For the amphipathic AA/MA grafted esterified hydroxypropyl cassava starch, the substitution ratio of hydroxypropyl is 0.18-0.36, the substitution ratio of esterification is 0.089-0.12, and the grafting efficiency and the conversion ratio of a monomer are respectively 44.0% and 63.4%.
