Abstract

The invention relates to a biological enrichment method of gamma-aminobutyric acid (GABA) from rice bran, in particular to a method for enriching and producing gamma-aminobutyric acid (GABA) from rice bran by enzyme biotechnology, which belongs to the field of food biotechnology. The method comprises the following steps: selecting rice bran as the raw material, extracting GAD in rice bran by phosphate buffer solution to obtain crude enzyme liquid, preparing fixed GAD from the crude enzyme liquid by using biomaterial chitosan as carrier and glutaraldehyde as crosslinking agent, adding a substrate glutamic acid or sodium glutamate to prepare GABA reaction liquid, centrifuging to obtain supernate, adding ethanol into the supernate to remove polysaccharide impurity, ultra-filtering to obtain high-concentration gamma-aminobutyric acid solution, or further concentrating and drying to obtain powdery product. The biological enrichment of GABA in rice bran can be used for producing edible GABA, and the GABA can be used as additives for functional health food, thus greatly improving added value of rice bran and achieving higher economic and social benefits.
