[0056] Maximally branched products were prepared from regular food grade potato starch and waxy potato starch by co-incubating with 400 U of branching enzyme activity per gram of starch at 68°C for 20 hours. The starch slurry is prepared by suspending the starch in 2 2H 2 O in demineralized water and heated in a water bath at 100°C for 20 minutes with stirring; the resulting starch solution was then autoclaved at 121°C for 20 minutes. The present invention relates to slowly digestible storage carbohydrates (starch, glycogen) having a branching degree of at least 8.5% and a side chain composition comprising at least 10 % of DP 5-7. Said slowly digestible carbohydrates can be produced by treating the substrate (glycogen, starch) from a native source with a glycogen branching enzyme derived from Rhodothermus obamensis, Rhodothermus marinus, Deinococcus radiodurans or Deinococcus geothermalis.
