The hickory nut stir-frying method is characterized by comprising the following steps of: performing noncontact heat exchange on airflow formed by high-temperature smoke produced by combustion of a fuel and clean air, heating the stir-fried hickory nut by using the heat exchanged high-temperature airflow, and drying and pre-heating the fuel to be added by using the residual heat of the heat exchanged high-temperature smoke. The machine comprises a combustion furnace and a stir-frying furnace. The machine is characterized in that: the lower part of the combustion furnace is provided with a combustion chamber, the upper part of the combustion furnace is provided with a mazy heat exchange passage, the heat exchange passage comprises a smoke passage and an airflow passage which are mutually isolated, the inlet of the smoke passage is communicated with the combustion chamber, the outlet of the smoke passage is connected with a fuel drying tower, the inlet of the airflow passage is communicated with the outside, and the outlet of the airflow passage is connected with the stir-frying furnace.
