Abstract

The invention discloses a method for measuring high and low-density lipoprotein cholesterol content of animal meat. The method comprises the following steps of: saponifying lipid in the animal meat by using potassium hydroxide and absolute ethanol, extracting cholesterol serving as an unsaponifiable substance by using absolute ethyl ether, then separating out the high-density lipoprotein cholesterol in the cholesterol by using a phosphotungstic acid-magnesium chloride precipitant, separating out the low-density lipoprotein cholesterol in the cholesterol by using a sodium citrate-heparin precipitant, finally measuring the peak areas of the high-density lipoprotein cholesterol and the low-density lipoprotein cholesterol by using a gas chromatograph, and calculating the content of the high and low-density lipoprotein cholesterol content by using the peak areas. The high and low-density lipoprotein cholesterol content of the animal meat can be accurately and quantitatively measured by adopting the method, and the content value measured by adopting a medicinal method in the animal muscular tissue transudate is not total content in the muscle.
