Abstract

The invention discloses a method for measuring high and low-density lipoprotein cholesterol content of animal meat. The method comprises the following steps of: saponifying lipid in the animal meat by using potassium hydroxide and absolute ethanol, extracting cholesterol serving as an unsaponifiable substance by using absolute ethyl ether, then separating out the high-density lipoprotein cholesterol in the cholesterol by using a phosphotungstic acid-magnesium chloride precipitant, separating out the low-density lipoprotein cholesterol in the cholesterol by using a sodium citrate-heparin precipitant, finally measuring the peak areas of the high-density lipoprotein cholesterol and the low-density lipoprotein cholesterol by using a gas chromatograph, and calculating the content of the high and low-density lipoprotein cholesterol content by using the peak areas. The high and low-density lipoprotein cholesterol content of the animal meat can be accurately and quantitatively measured by adopting the method, and the content value measured by adopting a medicinal method in the animal muscular tissue transudate is not total content in the muscle. Therefore, the invention provides an accurate and reliable method for accurately evaluating the functional animal meat.
