Abstract

The invention provides a method for modifying dextrin by means of hydroxypropylation. The method can be a direct method or an indirect method. The direct method is a technique for directly chemically modifying maltodextrin or pyrolytic dextrin by means of hydroxypropylation to directly prepare hydroxypropyl modified dextrin. The indirect method includes adding water into starch which is a raw material to concoct the starch to obtain starch milk with the mass concentration of 1%-50%; feeding nitrogen into the starch milk and adding propylene oxide and sodium hydroxide into the starch milk; enabling the starch milk, the nitrogen, the propylene oxide and the sodium hydroxide to react for 1-48 hours, and regulating a mixture of the starch milk, the nitrogen, the propylene oxide and the sodium hydroxide until a pH (potential of hydrogen) value of the mixture ranges from 5 to 7 so as to obtain crude hydroxypropyl starch; degrading the crude hydroxypropyl starch by an enzymatic degradation process or an acid-heat process to obtain crude hydroxypropyl dextrin with a DE (digestable energy) value of 1-25; degrading the crude hydroxypropyl dextrin by the aid of enzymes, and performing activated carbon decoloration, ion exchange refining, concentration and spray-drying on the degraded crude hydroxypropyl dextrin to obtain a hydroxypropyl modified dextrin product. The method has the advantages that the hydroxypropyl dextrin product prepared by the method is good in stability, coagulation resistance and freeze-thaw stability and high in transparency as compared with an unmodified dextrin product, and the like.
