The method comprises the following steps: (1) washing and crushing a sweet potato, sieving the crushed sweet potato, adding pure water, stirring and soaking, and taking supernatant; (2) centrifuging the supernatant obtained in the step (1), and taking the supernatant; (3) filtering or performing suction filtering on the supernatant obtained by the step (2) through a food-grade activated carbon layer; (4) slowly adding the filtrate obtained in the step (3) into food-grade alcohol under the stirring condition, and standing to obtain flocculent mixed liquid; (5) centrifuging the flocculent mixed liquid which is obtained in the step (4); (6) collecting the solid obtained in the step (5), and performing vacuum drying or freeze drying to obtain finished sweet potato protein. Compared with the conventional process, the extracting method for the sweet potato protein disclosed by the invention has the advantages that the process is simple and stable, conditions are mild, the environment-friendly effect is achieved, and the purity of the obtained sweet potato protein is 92 to 97 percent, and the purity is higher compared with the purity of the sweet potato protein of 72.4 percent obtained by the conventional process method.
