The invention provides puffed food containing a papaya extract and a preparation method of the puffed food. The puffed food is prepared from the following raw materials in parts by weight: 20 to 60 parts of dried potato powder, 50 to 100 parts of buckwheat powder, 10 to 22 parts of papaya extract, 6 to 10 parts of carrot extract, 10 to 13 parts of yeast extract powder, 2 to 6 parts of baking soda, 2 to 6 parts of table salt, 1 to 6 parts of flavoring agent and 100 to 150 parts of water. The preparation method comprises the following steps: preparing the carrot extract and the papaya extract; mixing the materials; baking, frying and carrying out microwave expansion. The puffed food provided by the invention contains abundant dietary fibers, amino acid, vitamin, trace element volatile oil, carotene, protein, nucleotide and a growth factor and is healthy, safe and nutritious puffed food; the preparation speed of the carrot extract and the papaya extract is high and the extraction effect is good; in addition, no food additive is added in the formula of the puffed food provided by the invention, so that higher safety, environment friendliness and good mouth feel are realized.
