Abstract

The invention discloses a composite natural bacteriostatic agent prepared through a Maillard reaction, as well as a preparation method and application of the composite natural bacteriostatic agent. The bacteriostatic agent provided by the invention can be used as an antibacterial agent, a fresh keeping agent and an antioxidant in food service industry. The novel composite natural bacteriostatic agent is synthetized by chitooligosaccharide and nisin through the Maillard reaction.
