The invention discloses a preparation process for anti-oxidation high-temperature-resistant edible oil. The preparation process comprises the following steps: (1) pretreating raw materials; (2) separately crushing the prepared raw materials and mixing the crushed raw materials; (3) pressing the mixed raw materials; (4) performing primary filtration on the product obtained in the step (3); (5) adding an antioxidant into the product obtained in the step (4) and performing stirring; (6) performing secondary filtration on the product obtained in the step (5); (7) heating the product obtained in the step (6) to temperature of 30-60 DEG C, keeping the temperature for 2-5 h, and performing cooling to normal temperature to obtain finished-product oil; (8) performing component detection on the finished-product oil obtained in the step (7); and (9) performing bottling on the qualified finished-product oil obtained in the step (8), sticking labels, and performing packing. According to the preparation process disclosed by the invention, after the raw materials are mixed, pressing is performed, so that pressing time is shortened, and production efficiency of the edible oil is improved.
