Abstract

The present invention discloses a high-nitrogen ventilation fermentation method. The high-nitrogen ventilation fermentation method comprises the following steps: (1) materials are selected: fruits with high enzyme content are selected; bad fruits are removed; a certain weight of sugar is weighed for standby application; and the high sugar content can inhibit growth of bad micro-organisms; (2) thefruits are treated: the selected fruits in the step (1) are washed clean; the washed clean fruits are air-dried; the air-dried fruits are peeled to remove residues of pesticides and chemical fertilizers on the peels; and the fruits are cut into blocks; and (3) the raw materials are mixed: the obtained fruit blocks treated in the step (2) are put into a fermentation tank; the sugar and yeast liquidare sequentially added for mixing; and after mixing, a layer of the sugar is laid on the surface layers of the materials. Through the above manner, the high-nitrogen ventilation fermentation method can improve a rate of finished products of an enzyme production and fermentation quality by controlling cleanliness of environment inside and outside the tank, and at the same time, strictly controls fermentation temperature and storage temperature during the fermentation process, so that the fermentation effect is better. Besides, the fermented raw materials are subjected to the fruit peel treatment; and the pollution of the peels, affecting safety of enzyme consumption, is avoided.
