Abstract

Instant camellia oleosa seed oil fatty acid milk and preparation method thereof are provided. The fatty acid milk is mainly prepared from the following raw materials: camellia oleosa seed oil subjected to winterization, emulsifier, puffed millet, whole milk powder and water. The preparation method comprises the following steps of (1) emulsification of the camellia oleosa seed oil: adding the emulsifier to the warm water, mixing uniformly, adding the camellia oleosa seed oil subjected to winterization, emulsifying and homogenizing to obtain a camellia oleosa seed oil emulsion; (2) dispensing: adding milk produced by the whole milk powder to the camellia oleosa seed oil emulsion, mixing evenly, adding the puffed millet and mixing evenly to obtain mixed materials; (3) freeze drying: quick freezing, vacuum heating drying, cooling to the room temperature, pulverizing and packaging. The instant camellia oleosa seed oil fatty acid milk has comprehensive nutrition and good brewing property andhas an LDL oxidation inhibition effect according to in vitro cell experiments. The method has simple process, low cost and good processing adaptability, and is suitable for industrial production.
