Abstract

The present invention provides a plant sterol-containing milk beverage with excellent quality retention and stability, in which the plant sterol remains emulsified stably during long-term storage. The plant sterol-containing milk beverage contains a plant sterol, a milk ingredient, and at least one emulsifier selected from (a) an organic acid monoglyceride and sodium caseinate, and (b) microcrystalline cellulose. The milk beverage may further contain at least one member selected from the group consisting of sucrose fatty acid esters, xanthan gum, native gellan gum, and carageenan.

Description

technical field [0001] The present invention relates to milk drinks containing phytosterols. Specifically, it relates to a phytosterol-containing milk drink capable of stably emulsifying phytosterols for a long period of time during storage and having excellent quality retention and stability. The present invention also relates to a method for producing the above-mentioned phytosterol-containing milk drink, and a method for emulsifying and stabilizing the phytosterol-containing milk drink. Background technique [0002] In recent years, it is said that there is a trend of excessive intake of cholesterol in Japan due to Westernization and diversification of dietary life, changes in lifestyle, and the like. Cholesterol in the blood increases due to excessive intake of cholesterol contained in food, which becomes the main cause of cardiovascular diseases such as hyperlipidemia, arteriosclerosis, arrhythmia, and myocardial infarction. These diseases are now on the rise. Theref...
