Abstract

The invention discloses a betaine type composite fermented addition agent and an application thereof in fermented soybean meal. The betaine type composite fermented addition agent comprises the following raw materials and components: 90-98.5% of betaine, 0.1-0.8% of CuSO4.5H2O, 0.2-1% of MnSO4.H2O, 0.5-5% of ZnSO4.7H2O and 0.5-5% of FeSO4.7H2O. Finished fermented soybean meal products are obtained through the following steps: sterilizing soybean meal cultures consisting of 60-80wt% of soybean meal, 15-35 wt% of bran and 5-10 wt% of cane sugar at a high temperature, pouring bacillus subtilis liquid into a fermenter, and performing fermentation for 48-60 hours; and then pouring lactic acid bacteria liquid according to the pouring quantity of 2-5 wt% and the composite fermented addition agent according to the addition quantity of 1.0-6.0wt%, performing fermentation for 36-48 hours, after fermentation, drying fermented materials, and screening the dried fermented materials so as to obtain the finished fermented soybean meal products. The betaine type composite fermented addition agent disclosed by the invention is applied to the fermentation of soybean meal, the fermentation effect is improved, and the stable quality of the fermented soybean meal is guaranteed.
