Abstract

The invention discloses fermented melon seeds rich in small peptides and a processing method thereof. Fermentation is carried out by adding clear water, complex probiotics and glucose to hulled dry melon seeds, and then the melon seeds are dried to prepare the fermented melon seeds. The complex probiotics are composed of bacillus subtilis, brewers' yeast, aspergillus niger and bifidobacteria. The processing method of the fermented melon seeds comprises the following steps: washing fresh melon seeds, and drying until water content is below 10% so as to prepare hulled dry melon seeds; adding the complex probiotics and glucose into clear water and uniformly stirring; adding the hulled dry melon seeds into a product in the step B and uniformly stirring; sealing and fermenting at 28-32 DEG C for 2-7 days; taking out the melon seeds, and drying at 50-75 DEG C until water content is below 10%; and carrying out sealed packaging.
