Abstract

The invention discloses a method for producing glacial acetic acid with potatoes and belongs to the technology of food processing. The method specifically includes six steps of potato selection and primary processing, cooking, liquidation, fermentation and alcoholizing, acetic fermentation and reduced pressure distillation. Shortcomings that the glacial acetic acid is high in production cost and complex in process are effectively overcome. The method has the advantages that the glacial acetic acid is produced through the potatoes instead of grain, production cost is lowered, simpleness in the process is achieved, content of potassium of the produced glacial acetic acid is 25 times higher than that of rice vinegar, content of lysine, valine and phenylalanine is 2-3 times higher than that of the rice vinegar, and nutrient value is prior to the glacial acetic acid produced from the grain.
