A production method of an ALPHA-linolenic acid microcapsule comprises the steps of: mixing cold pressed linseed oil and corn protein porous starch used as a carrier, coating with alcohol-dissolved corn protein liquid, and producing ALPHA-linolenic acid microcapsule with a rotary embedding method. The used corn protein porous starch and alcohol-dissolved corn protein are both natural food raw materials with good safety and stable properties, which can effectively powder liquid oil and fat, so as to prevent the oil and fat contacting with air and delay the oxidative deterioration of the unsaturated fatty acids in the linseed oil, and can block the unpleasant odor sent out from the linseed oil.
