Abstract

The object of the invention is to provide a method for preparing honey particles, comprising the following steps: adopting fresh liquid honey as raw materials for de-crystallization and liquification, concentration and filtering pre-processing, and adding 20%-50% of maltodextrin as accessorial materials for vacuum belt continuous drying. The temperature for drying comprises three stages: about 60-80 DEG C firstly, about 60-75 DEG C secondly and about 0-100 DEG C thirdly; the vacuum in the drying chamber is controlled to be 800-1600Pa; and 80-100 meshes honey particles are collected through the continuous crashing at vacuum. The solid particles have crystalline form, good solubility, clear and transparent solution and low cost, reserve most of the active materials of honey and can be produced in large industrialization scale.
