Abstract

The instant calcium caseinate with high content of calcium is produced by treating the food-grade casein which is used as the raw material, adding an emulsifier and drying. The method comprises the following steps: (1) dissolving: preparing the raw material which is the food-grade casein into a solution with the mass concentration of 4-10%, adding the food-grade aqueous ammonia slowly to adjust the pH value to 5.5-8.0, and stirring continuously to dissolve the casein; (2) converting: preparing the calcium hydroxide powder into a suspension, and adding the suspension into the solution of the dissolved casein, wherein the mass of the calcium hydroxide powder is 1.5-2.5% of that of the casein; (3) emulsifying: adding water-soluble soya bean lecithin after converting, and mixing uniformly; (4) grinding by using a colloid; (5) sterilizing; (6) homogenizing by using a homogenizer with the homogenizing pressure of 20-30Mpa; and (7) drying by spraying to obtain the finished product which is the instant calcium caseinate. The instant calcium caseinate has a pure color, good solubility and high content of protein and calcium, thereby being a good protein and calcium supplement.
