Red pigment in the red date is relatively dark, and the red date contains many calcium-iron ions which have a strong sealing effect on pectin; in the presence of the calcium-iron ions, the pectin is not easily dissolved out; and meanwhile, the pectin also contains a great quantity of lip-soluble components which bring great influence on the purity of the pectin. According to the method provided by the invention, in a pretreatment stage, the red date is effectively subjected to decolorization, sealing ion removal and lipid removal by the mixed liquid of alkaline liquid and ethanol; after the extraction liquid is concentrated, the pectin is decolorized by use of the advantages of strong oxidization of hydrogen peroxide, no residue after decomposition and low cost, therefore the shortcomings of heating, filtering and micro-carbon granule residue in an active carbon decolorization method are overcome, and complicated processes are reduced; in a pectin sedimentation stage, the mixed liquid of ethanol and ammonia water is adopted so as to reduce the esterification degree of the pectin during the pectin sedimentation; and finally, high-quality red date low-lipid pectin with bright color can be obtained.
