Abstract

The invention relates to a novel method for extracting and purifying anthocyanin in pomace of aronia melanocarpa. The novel method specifically comprises the following steps: superfine pulverizing, enzymolysis and extracting, low-speed centrifuging, high-speed centrifuging, ultrafiltration impurity removal, macroporous resin purification, nanofiltration, freeze drying and the like. After the pomace is pulverized by a vibratory ultrafine pulverizer until the average granularity of materials is greater than 300 meshes, pectinase and cellulolytic enzyme are added for enzymolysis. An obtained enzymolysis solution is successively centrifuged at low speed and high speed by a separating horizontal spiral centrifuge and a self-cleaning type disc separator successively.
