The invention discloses a method for extracting and separating plant anthocyanin, which comprises the following steps: extracting plants containing anthocyanin by using an acidified ethanol solution, extracting an extracting solution containing the anthocyanin by using ethyl acetate, purifying the extracting solution by strong cation exchange, and then separating an anthocyanin monomer by high pressure liquid chromatography.
